Edgewood Creamery & Easy Tarte Flambée

A few weeks ago I had the opportunity to attend Tasty Expo and meet some incredible vendors. One of those vendors was Edgewood Creamery, a creamery and dairy located in Purdy, Missouri. The dairy is owned and operated by the Fletcher family. They operate on a pasture-based system, providing high-quality care for their cows so they produce the best milk possible. If you ever visit Purdy, make sure to stop their store! They provide customers the opportunity to check out the process, and even encourage tours to get a better understanding of life on the farm!

 

The Fletchers were so kind as to give me a sample of the one of their cheeses, Milk & Honey. This cheese is one of the varieties of fromage blanc, or a soft, white cheese. It’s similar to a ricotta and so versatile! The Milk & Honey offers a tinge of sweetness that makes it perfect for snacking and meals. Erik and I have enjoyed eating it from the container or paired with crackers and fruit. However, this past weekend we decided to step it up and whip up an Alsatian pizza, or tarte flambée.

To give a little background, Erik and I traveled all over Europe while he studied abroad, with one stop being Strasbourg, France. It was the cutest little town, and had some amazing food. During a day trip, we checked out the Académie de la Bière, or Academy of Beer. One of the specialities in this region of France is a tarte flambée, which is essentially a very thin flatbread with a crème fraîche base, onions, and bacon or ham. The waitress suggested a goat cheese and honey tarte flambée, so we went for it. It was life-changing, one of the best combinations we’ve ever had! So good, that we decided to put our own spin on the pizza.

 

 

I thought Edgewood Creamery’s Milk & Honey would be a perfect fit, adding a touch of sweetness and creaminess to the pizza. This time around, we also opted to add a sprinkle of arugula after baking. We adapted our recipe from Ashley Abroad’s recipe.

All of the measurements are approximate to what we used! Feel free to add more onion, ham/bacon, or post-bake toppings. We used ham because it’s what we had on hand, but we’ve made this with bacon in the past. We also paired ours with some IKEA mulled ‘wine’ juice that really complemented the flavors the sauce.

A and E's Milk & Honey Tarte Flambée
A French-style flatbread featuring a creamy sauce, onion, and ham. This is a honey and cheese variation, but feel free to make the toppings your own!

  1. Preheat oven (425º F) and prepare pizza crust according to package.
  2. In a small skillet, melt butter and begin to cook the onions. *Feel free to add more/less onion according to preference. Lightly caramelize them.
  3. While the onion is cooking, mix the sour cream, greek yogurt, and a few spoonfuls of the Milk & Honey cheese in a small bowl. Season with salt, pepper, and nutmeg. Add Milk & Honey to taste.
  4. Bake the pizza crust 2-3 minutes before adding toppings.
  5. Spread the sour cream/yogurt mixture on the crust. Top with the cooked onions and ham (or bacon, if that’s what you choose!).
  6. Bake for 5-8 minutes. Check to make sure the crust is a golden brown and cooked through. *We overdid ours, and it happened to be perfectly crisp!
  7. Top with more Milk & Honey cheese (add little “globs” all over!), sprinkle arugula, and drizzle with honey. Or add toppings of your own choosing!
  8. Cut, serve, and enjoy!
